Ingredients for 3 servings:

- 1 handful of arugula

First, prepare the dips and let them sit in the fridge for a few hours, or overnight if you prefer. For the arugula curd, finely chop fresh arugula. Mix all the other ingredients until smooth and stir in about 3 tablespoons of chopped arugula. Let it sit and season with salt and pepper. If the curd is too thick, stir in a little milk. For the dill sour cream, also mix all the ingredients, let it sit and season to taste. Freeze-dried dill tips have a more intense flavor than fresh dill. Fresh dill needs to be used more generously. If the sour cream is too thick, stir in a little more cream or milk. For the fritters, finely grate the vegetables and finely dice the onion using the small disc on a food processor or a vegetable grater. Mix well with the egg, a heaped tablespoon of flour, 1-2 teaspoons of pepper and salt and let stand for 10 minutes. Mix thoroughly again and fry in batches in hot oil or clarified butter in a non-stick pan until fritters are formed. It’s best to use two pans. The time it takes to work the dough depends on the thickness and quantity of the pancakes. Serve the pancakes hot with smoked salmon and dill cream, or with arugula curd cheese for heartier smoked fish. A green salad goes well with the pancakes. One pancake each with dip and salmon also makes a great appetizer.
