Ingredients for 4 servings:
- 700 g potatoes
- ½ cup peas, frozen
- ½ cup corn from the can
- 1 carrot(s)
- 6 tbsp cornstarch
- 1 tsp herbs
- e.g. salt and pepper
- 12 tbsp whole wheat breadcrumbs
- e.g. rapeseed oil
Instructions
Working time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 25 minutes
Boil the potatoes in their skins, then let them cool slightly, peel them, and roughly mash them. Wash and grate the carrots. Thaw the frozen peas. Drain the corn. Mix everything together and add the herbs and spices. Finally, thicken with the cornstarch. Form the sticks and coat them in the breadcrumbs. Heat a pan with rapeseed oil and fry the sticks on both sides over high heat, or even better, all over, similar to fish sticks. Serve fresh. A nice salad, for example, goes well with this.
