Ingredients for 5 servings:
- 750 g potatoes
- 5 tbsp oil
- 2 tsp coriander seeds, coarsely ground
- 1 tsp mustard seeds, coarsely ground
- 1 tsp fenugreek seeds, coarsely ground
- 1 tsp cumin powder
- 1 garlic clove(s), squeezed
- 2 tsp salt

Preheat the oven to 200°C (top/bottom heat). Meanwhile, wash and brush the potatoes. Cut them into quarters or eighths, depending on their size. Combine the spices, oil, and potato pieces in a sealable bowl or bag and mix thoroughly. Let stand for 10 minutes. Line a baking sheet with parchment paper or a baking mat. Spread the potatoes on top and cook in the oven for 45-50 minutes.
