Ingredients for 1 servings:
- 500 g ready-made mix for farmhouse bread
- 1 kg potatoes
- 10 tbsp oil
- 330 ml water, lukewarm
- Thyme
- Salt
Instructions
Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 55 minutes
Knead the lukewarm water and baking mix in a bowl until the dough starts to pull away from the edges. Cover with foil. Leave to rise in a warm place for about 30 minutes. Line two baking sheets with baking paper. Knead the dough again with floured hands and divide it in half. Roll out half of the dough thinly on each baking sheet (about 25 x 26 cm). Brush the dough with water and leave in a warm place for another 20-30 minutes. Brush with water again if necessary. Thinly slice the potatoes. Spread evenly on the two dough flatbreads. Sprinkle with thyme and salt. Drizzle each with about 5 tbsp of oil. Bake in a hot oven (electric oven: 250°C / fan: 225°C / gas mark 5) for about 25-30 minutes until crispy and brown.
