Potato cake with mozzarella

Ingredients for 4 servings:

  • 600 g potatoes, floury
  • 50 g sour cream
  • 50 g cheese (Gouda), grated
  • 2 eggs
  • ½ bunch spring onion(s), cut into fine rings
  • 2 tbsp mushrooms (mixed mushrooms), dried
  • 3 garlic cloves, chopped
  • 400 g mozzarella, sliced
  • 1 tbsp chives, chopped
  • 7 black olives, sliced
  • 4 tomatoes, pitted and chopped
  • Herbs (Italian herbs), dried
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Soak the mushrooms in water, squeeze dry, and chop finely. Peel, wash, and grate the potatoes, mix with the next three ingredients, and season generously with salt, pepper, and nutmeg. Then place them in a greased springform pan and bake in a preheated oven at 200°C for 20 minutes. Mix the remaining ingredients, except for the mozzarella and chives, season with salt, pepper, and Italian herbs, and add to the potato mixture. Spread the mozzarella on top and bake for about 40 minutes, until the cheese is browned. Garnish with chives and serve.
