Potato, carrot and ginger soup

Ingredients for 4 servings:

  • 600 g carrot(s)
  • 10 m.-sized potatoes
  • 4 m.-sized onion(s)
  • 1 piece(s) ginger, mandarin-sized
  • 1 ½ liters vegetable stock, fresh or instant
  • 200 ml cooking cream, 15% fat
  • 4 tbsp sherry
  • 1 pinch of dried lemongrass
  • 2 tbsp soy sauce
  • ½ tsp cumin
  • 1 tsp turmeric
  • 1 tbsp balsamic vinegar, lighter
  • e.g. salt and pepper
  • Oil, e.g. rapeseed oil

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Dice the onions and carrots and sauté in a little oil. Dice the potatoes and add them. Pour in the vegetable stock and add the grated ginger. Add the sherry, soy sauce, balsamic vinegar, and spices and simmer for about 20-25 minutes. Then puree, add the cooking cream, and season to taste. This is a slightly spicy, appetizing soup that, along with a slice of bread, also makes a quick main course.
