Ingredients for 4 servings:

  • 2 rabbit kidneys
  • 1 rabbit heart(s)
  • 1 rabbit liver
  • 1 onion(s)
  • 1 garlic clove(s)
  • 2 tsp butter
  • 1 dl port wine
  • 2 sprigs of thyme, fresh
  • 3 slice(s) bread(s), cut into small pieces
  • a little salt and pepper
  • little broth

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 21 minutes

Offal feast on toasted bread

Finely chop the giblets, onion, and garlic. Briefly fry everything in butter, deglaze with port wine, and season with stock. Sprinkle with fresh thyme, let it infuse briefly, and season with salt and pepper. Briefly toast the bread in the oven with the grill function at high temperature. Spread the mixture on the bread, garnish with fresh thyme, and serve as a snack. It’s an aperitif for several people, and a delicious meal for two with a salad.
