Potato casserole with fried eggs

Ingredients for 4 servings:

  • 800 g potatoes, waxy
  • 2 onions
  • 100 g diced ham
  • 250 g cheese, grated
  • 250 g natural yogurt
  • 2 tbsp mustard
  • salt and pepper
  • paprika
  • Herbs to taste
  • 4 eggs

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Simple and delicious

Preheat oven to 180°C (top/bottom heat). Peel and coarsely grate the potatoes, then lightly squeeze dry liquid into a kitchen towel. Briefly fry the chopped onions and diced ham in a little cooking fat. Mix natural yogurt and 2 generous tablespoons of mustard, season generously with salt, pepper, and paprika, and season to taste. Add herbs to taste. Mix the potatoes, onions, ham, cheese, and yogurt sauce together and pour into a greased baking dish. Bake for at least 45 minutes (check that the potatoes are cooked through). Then remove the baking dish from the oven, make four indentations with a spoon, and crack a raw egg into each indentation. Return the baking dish to the oven and continue baking until the eggs reach the desired consistency.
