hearty potato dumplings with bacon and onions – ideal as a starter in beef broth or as a main course with salad

Sauté the bacon cubes and onions in a pan until translucent. Place the grated potatoes in a bowl. Add the bacon cubes, onions, and eggs to the grated potatoes and mix. Season generously with salt, pepper, and nutmeg. Add enough flour to form a firm dough. Bring a pot of salted water to a boil. Scoop a teaspoon of dumplings from the dough and cook in the salted water for about 6 minutes, until they rise to the surface. Serve in beef broth as an appetizer or with salad as a main course.
