Crispy baked asparagus

Ingredients for 2 servings:

  • 1,000 g asparagus, white
  • 100 g Grana Padano, grated, or another savory cheese
  • 80 g butter
  • 2 tbsp, stripped breadcrumbs (whole grain)
  • Salt
  • Erythritol (powdered sugar substitute) or powdered sugar
  • Butter for the mold

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

White asparagus with Grana Padano and wholemeal breadcrumbs, crispy baked

Preheat oven to 200°C (top/bottom heat). Peel the asparagus two-thirds full and place the peeled spears in a buttered baking dish. Season each layer generously with salt and sprinkle with butter pieces and erythritol or powdered sugar. Cover the baking dish with a lid or aluminum foil. Mix the grated cheese with the breadcrumbs and set aside. Cook the asparagus in the hot oven for about 35 minutes. Remove the lid, sprinkle the cheese and breadcrumb mixture over the asparagus, and bake uncovered for another 5-8 minutes, until the cheese is melted and lightly browned.
