Potato-Hokkaido Rösti from the tray

Ingredients for 4 servings:

  • 600 g potatoes
  • 500 g Hokkaido pumpkin(s)
  • 2 onions
  • 100 g mountain cheese
  • 1 egg(s)
  • 160 g bacon, diced
  • 200 g sour cream
  • 25 g chives
  • 2 tbsp butter
  • 1 tsp sweet paprika powder
  • salt and pepper
  • Butter for the baking tray

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 25 minutes

Peel the potatoes and onions, core the Hokkaido cheese. Coarsely grate the potatoes, onions, pumpkin, and mountain cheese. Mix everything with the bacon, egg, and seasoning. Preheat oven to 180°C (top/bottom heat). Grease a baking tray with butter or use baking paper. Spread the mixture loosely on the baking tray. Bake in the hot oven on the middle rack for 40-45 minutes. Wash the chives and cut them into rolls. Mix half of them with the sour cream, seasoning with salt and pepper to taste. Remove the rösti from the oven, sprinkle with the remaining chives, and serve with the chive and sour cream.
