Potato pan with peas

Ingredients for 3 servings:

  • 5 large potatoes
  • 200 g peas, frozen or fresh
  • possibly dried tomatoes
  • 2 eggs
  • curry powder
  • Paprika powder, sweet
  • Basil, dried
  • some milk or cream
  • some salt and pepper
  • some olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

vegetarian

First, peel the potatoes and cut them into small cubes. If necessary, defrost and warm the peas according to the package instructions. Cook the potato cubes in lightly salted water until tender and drain. Then, lightly fry the sun-dried tomatoes, peas, and potatoes in a pan with a little olive oil. Finally, add two beaten eggs and mix well. Next, deglaze with a little milk or cream and season with curry powder, paprika, salt, and pepper to taste. Serve with a mixed salad.
