Potato pancakes with applesauce

Ingredients for 4 servings:

  • 500 g mashed potatoes (leftover mashed potatoes from the previous day)
  • 500 g low-fat curd cheese
  • 300 g flour
  • 2 m.-sized eggs
  • salt and pepper
  • e.g. fat for frying
  • Flour for the work surface

Combine mashed potatoes, low-fat quark, flour, eggs, salt, and pepper, if desired, in a bowl and mix with a wooden spoon. Finally, transfer to a floured surface and knead into a smooth, firm dough. Add a little more flour if necessary (depending on the consistency of the mashed potatoes). Roll out the dough to a thickness of about 1.5–2 cm. Use a glass to cut out round cookies. Fry them in hot oil on both sides until crispy. Serve with applesauce or apple compote. We also like it as a main course when you don’t always want meat or something savory.
