Ingredients for 4 servings:
- 400 g mashed potatoes
- 2 tbsp flour
- 2 eggs
- Salt
- e.g. raisins
- Peanut oil

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Mix the remaining, cooled puree with egg, flour, raisins, etc. Do not add any more liquid! Drop generously-sized blobs of the puree into a preheated nonstick pan with a spoon, smooth the surface, and fry. Turn the poffertjes over when the edges are brown. Turning them over too often will result in unnecessarily greasy poffertjes! A delicious recipe for using up leftovers.
