Ingredients for 4 servings:
- 1 ½ kg potatoes, cooked
- 500 g quark
- 2 eggs
- 2 tsp baking soda
- 400 g flour
- some salt and nutmeg
- e.g. fat, for frying

Baggers, potato pancakes
Peel the cooked potatoes and let them cool. You can also use potatoes from the day before. Press them through a potato ricer, or in a pinch, you can mash them if you don’t have one. Mix the potato mixture, eggs, quark, and spices. Mix the baking soda and flour well, sift it over the potato and quark mixture, and knead by hand until you have a dough that no longer sticks. You may need to add a little more flour. Form them into pancakes (with a little more flour if necessary) by rolling the dough out almost like a baguette, then cutting into slices and pressing them together. Then fry them in hot oil in a pan. I always make the pancakes small, so they don’t need to cook as long in the pan.
