Ingredients
- 1 kg Predominantly waxy potatoes
- 150 g Onions
- 200 g Red, green, yellow peppers
- 75 g Clarified butter or butter
- 3 tbsp Olive oil
- Salt and pepper to taste
- 30 g Wheat flour type 550
- 1 tbsp Tomato paste
- 0,75 L Meatsoup
- 1 Sour cucumber
- 2 small Garlic cloves chopped
Instructions
- Cut the peeled potatoes into cubes, the onions and peppers into strips. Fry in hot fat, sprinkled with salt and pepper. Stir the flour over it and stir until it is lightly browned. Add the tomato paste and the boiling broth, bring to the boil, cover and simmer on a low flame, but do not let them disintegrate. Finally add the cucumber cut into cubes to the ragout and season to taste.
