Ingredients for 2 servings:

  • 330 g jacket potatoes, waxy
  • 1 small onion(s)
  • ½ tbsp vinegar, mild
  • 1 tsp mustard
  • 50 g mayonnaise
  • 2 eggs
  • 1 piece(s) of meat sausage (size as required)
  • 5 gherkins
  • salt and pepper
  • Paprika powder
  • 1 bunch of parsley
  • 1 tbsp oil

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Boil the potatoes in their jackets. Let them cool, then peel and slice thinly (e.g., using an egg slicer). Place them in a bowl. Boil the eggs. Peel and finely dice the onion. Mix the vinegar, oil, mustard, and onion together, pour over the potatoes, and let it absorb. Meanwhile, peel and finely chop the eggs, then add them to the potatoes. Now add the sausage and gherkins, also finely diced. Finally, add the mayonnaise and season with salt, pepper, and paprika. Now just finely chop the parsley and stir in.
