Potato salad with cucumber and dill dressing

Ingredients for 4 servings:

  • 500 g potatoes
  • 1 cucumber(s)
  • 4 tbsp balsamic vinegar
  • 6 tbsp oil
  • 1 tsp mustard, medium hot
  • 1 tbsp cream or condensed milk
  • 1 tbsp dill
  • Salt
  • Pepper from the mill

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Boil the potatoes, peel them, and dice them. Peel the cucumber and slice or grate them thinly. Sprinkle the slices with salt and let them stand for about 30 minutes, then drain off any excess water. Mix the cucumber with the potatoes. Make the dressing and mix it with the potatoes and cucumber. Season the salad well with salt and pepper, if desired.
