Potato salad with herbs

Ingredients for 2 servings:

  • 500 g potatoes
  • 1 box of cress
  • some chives
  • some parsley
  • 3 tbsp olive oil
  • lemon juice
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the potatoes, then peel them. Slice them while they’re still warm and place them in a bowl. Chop the herbs and add them. Add the olive oil and season with salt, pepper, and lemon juice. Delicious hot or cold.
