Warm potato salad

Ingredients for 4 servings:

  • 1.2 kg potatoes
  • Salt and pepper, liquid sweetener
  • 3 bell pepper(s), red
  • 3 onions
  • 4 gherkins
  • 1 bunch of radishes
  • 1 bunch of chives
  • 1 cup cucumber juice
  • 1 cup vegetable broth
  • 2 tsp oil (walnut oil)
  • 2 tsp mustard

Working time approx. 30 minutes; Total time approx. 30 minutes

Boil the potatoes in their skins in salted water for about 20 minutes, peel, and slice while still warm. Dice the bell peppers, onions, and cucumbers, slice the radishes, and finely chop the chives. Set aside 1 tablespoon of chives for garnish. Toss the vegetables with the remaining chives. Combine the cucumber juice, broth, oil, and mustard, heat, and season with salt, pepper, and sweetener. Add the dressing to the salad, mix, and let stand for about 15 minutes. Arrange the salad on plates and serve sprinkled with chives.
