Potato Salad with Pickled Cucumber

  • 2 size Potatoes
  • 7 Gherkins
  • 1 pinch Salt
  • 1 Onion
  • 1 teaspoon Mustard
  1. Peel the potatoes and cut into thin slices.
  2. Drain the cucumber stock and salt in a saucepan, bring it to the boil and cook the potatoes for 6-8 minutes.
  3. Peel the onion, cut into quarters into thin strips. Cut the cucumber into slices
