Potato Salad with Sauerkraut

Ingredients
 

  • 6 Pc. Jacket potatoes
  • 1 Can Sauerkraut drained
  • 1 Pc. Red onion, diced
  • Salt
  • Black pepper
  • Olive oil

Instructions
 

  • Squeeze out the sauerkraut and put it in a bowl.
  • Dice the onion and place in the bowl.
  • Dice the potatoes and put them in the bowl as well.
  • Now add plenty of olive oil, not too short of black pepper and a little salt.
  • Mix everything well and let it steep. (Depending on the type of herb and taste, from 10 minutes to 1 hour.)
  • Alternatively, you can add a few chopped capers and mayo instead of oil.
