Ingredients for 4 servings:

  • 500 g potatoes, floury
  • 1 carrot(s)
  • 1 onion(s)
  • 2 stalk(s) leeks
  • 100 g butter
  • 500 ml milk
  • 375 ml meat broth
  • Salt
  • Seasoning
  • pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Wash, peel, and dice the potatoes and carrots. Peel and chop the onion. Halve the leek, wash under running water, and cut into thin strips. Melt the butter in a deep saucepan, add the vegetables, and sauté for 5 minutes. Pour the milk and meat broth into the vegetables. Simmer the soup over medium heat for about 40 minutes. Then purée half of the soup. Use it to thicken the remaining soup. Season the soup generously to taste.
