Ingredients for 3 servings:

  • 5 large potatoes (preferably floury ones)
  • 1 thick carrot(s)
  • 1 bunch of chives
  • 1 lime(s)
  • 1 bunch of onions
  • n. B. Oil (e.g. sunflower oil or rapeseed oil)
  • salt and pepper
  • n. B. water

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut the potatoes, carrot, and onion into equal-sized cubes. Chop the chives. Place the potatoes, carrot, and chives in a bowl and moisten with a good teaspoon of lime juice, then mix well. Add 2 teaspoons of oil to a pot and sauté all the ingredients together in the oil, then deglaze with water and top up. Season with salt and pepper to taste. Simmer for 15 minutes. Finally, puree with a hand blender until all the ingredients are combined with the water. The water should always generously cover the simmering vegetables. Use more or less water depending on how thick you want the soup to be. When serving, you can use some of the reserved chives to garnish the soup.
