Ingredients for 2 servings:

  • 400 g potatoes
  • 1 onion(s), finely chopped
  • 2 bell peppers, red and yellow
  • 4 tbsp olive oil
  • salt and pepper
  • 4 eggs
  • 2 large beefsteak tomatoes
  • ½ bunch parsley, flat, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes and slice them very thinly. Finely chop the onion. Finely dice the bell peppers. Fry the potato slices on both sides in hot oil. Add the onion and bell pepper and fry. Season with salt and pepper. Slice the tomatoes and arrange them on top of the potatoes. Beat the eggs, season with salt and pepper, and add the finely chopped parsley. Pour over the contents of the pan and bake in a preheated oven at 180°C for about 15 minutes.
