Potato tortilla

Ingredients for 2 servings:

  • 250 g potatoes, floury
  • 1 large onion(s)
  • 4 tbsp oil
  • Salt
  • pepper
  • 4 eggs
  • ½ bunch chives

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel, wash, and dry the potatoes, then slice or slice into approximately 2mm thick slices. Dry the slices thoroughly with kitchen paper. Peel the onion and slice into thin rings. Heat the oil in a pan and fry the onions until translucent, turning occasionally. Reduce the heat to low and arrange the potatoes in the pan so that they are as close together as possible. Sprinkle with salt and pepper and fry for about 10 minutes, turning occasionally. Meanwhile, beat the eggs. Pour over the potatoes, spread them out, and let them set for about 10 minutes. Fry the tortilla for another 5 minutes on the other side (it’s best to let it slide onto a separate plate). Cut the tortilla in half and serve sprinkled with chives. If the pans available aren’t too big, simply bake two tortillas.
