Potato Tortilla with Bacon
The perfect potato tortilla with bacon recipe with a picture and simple step-by-step instructions.
- 500 g Boiled potatoes
- 2 small Fresh shallots
- 100 g Bacon slices
- 6 piece Eggs
- 0,5 bunch Parsley
- 2 tbsp Rapeseed oil
- Salt and pepper
- Peel the potatoes, cut them into thin slices and fry them in a pan until golden.
- Cut the bacon into small pieces and leave in a second pan. Peel shallots and cut into slices. Add shallots to the bacon and let simmer briefly., (If necessary add a little more oil) ,.
- Whisk the eggs, season with salt and pepper, pluck the parsley leaves from the stems and roughly chop them. Add the parsley (set aside about 1 tablespoon) to the egg and mix.
- Add the bacon and shallots to the potatoes and stir in. Scatter the eggs with the parsley over the top and let it set. Turn the tortilla and fry for another 4 minutes. Arrange the tortilla on plates and serve sprinkled with parsley.
