Ingredients
 

  • 400 g Potatoes, predominantly waxy
  • 100 ml Hot water
  • 400 g Flour
  • 1 packet Dry yeast
  • 1 Tl Salt, approx. 7 g
  • 1 Egg
  • 1 bunch Wild garlic, or more!
  • Flour for the work surface

Instructions
 

  • Mix the flour with the dry yeast and salt. Dry the peeled potatoes and grate them finely. Pour over the grated potatoes with 100 ml of boiling water. Add the potato mixture and the egg to the flour mixture. Knead the dough well (if necessary add a little more flour) and cover and let rise in a warm place for about 30 minutes. Preheat the oven to 225 ° C (top and bottom heat). Knead the dough well again on a floured surface and shape it into a round body or loaf shape with floured hands. Place on a baking sheet lined with baking paper or in a floured loaf pan. Slide onto the middle rail of the oven. In addition, place a bowl of hot water on the bottom of the oven. Bake the potato bread for about 20 minutes at 225 ° C. Then switch the temperature down to 200 ° C and place the potato bread on the 2nd rail from the bottom. Bake for another 30 minutes. If you tap the bread with your knuckle and it sounds hollow, then the bread is ready!
