Potatoes with arugula curd

Ingredients for 2 servings:

  • 500 g potatoes
  • 250 g quark, 20%
  • 1 tbsp mineral water
  • 1 garlic clove(s)
  • salt and pepper
  • Paprika powder
  • 50 g arugula

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Cook the potatoes in salted water for about 25 minutes. Mix the quark with the mineral water and finely chopped garlic, and season with salt, pepper, and paprika. Trim the long stalks from the arugula and wash the lettuce. Drain and peel the potatoes. Toss the quark with half of the arugula leaves. Arrange the quark and potatoes on two plates and scatter the remaining arugula over the top. Sprinkle the dish with a little pepper.
