Potatoes with spinach Indian style

Ingredients for 4 servings:

  • 300 g potatoes
  • 500 g spinach, fresh
  • 150 ml vegetable stock
  • 2 onions, red
  • 2 garlic cloves
  • ½ tsp chili powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 chili pepper(s), red, sliced ​​into thin rings or chopped
  • 2 tbsp oil
  • e.g. salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Peel, wash, and dice the potatoes, slice the onion into rings, and crush the garlic. Heat the oil in a pan and sauté the onion and garlic for 2 minutes. Add the chili, cumin, and coriander powder and sauté for half a minute. Deglaze with the vegetable stock, then add the potatoes and spinach. Bring to a boil, then simmer with the lid on and reduce the heat for 10 minutes, until the potatoes are tender. Add the chili pepper and season with salt and pepper, then cook for another 2-3 minutes. Serve.
