Potatoes with spinach

Ingredients for 6 servings:

  • 800 g potatoes, mostly waxy, diced
  • 1 onion(s)
  • 1 clove(s) garlic, finely chopped
  • 1 tbsp, sautéed garam masala (curry powder also works)
  • 1 tsp, leveled chili powder
  • 450 g spinach, frozen, chopped
  • 2 large tomatoes
  • 5 tbsp oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 13 minutes; Total time approx. 23 minutes

Indian, vegan

Boil the potatoes for 8 minutes. Then fry them in the oil for 3 minutes. Add the following ingredients to the pan: onions, garam masala, chili, and garlic. After about 1 minute, add the spinach and bring to a boil. Cook for at least 2 minutes. Add the tomatoes and salt. Turn off the heat and let stand, covered, for another 2 minutes. Serve with a quark and yogurt dip (tzatziki) or with rice. Note: Cooking time also depends on the size of the potato cubes.
