Prawn Surprise
The perfect prawn surprise recipe with a picture and simple step-by-step instructions.
- 2 tbsp Good olive oil
- 1 Spring onion
- 1 Garlic cloves
- 1 Large, red chilli pepper – medium hot
- 4 Prawns, caliber 08/12
- 4 tbsp Mount Gay Rum
- 125 ml Dry white wine
- 1 tsp Worcester sauce
- Juice and zest of a lime
- 1 Small sprig of rosemary
- Salt, pepper, cayenne pepper
- 70 g Butter
- Remove the bowels from the prawns and peel them down to the end of the tail.
- Heat the olive oil in a large pan over medium heat and sauté the spring onions, garlic and the finely chopped chilli for about 3 minutes.
- Add the prawns and fry for about 3 minutes. Deglaze with the rum.
- Remove the prawns and keep warm. Add the white wine, Worcestershire sauce, juice and zest of the lime and the rosemary sprig to the pan and simmer for about 10 minutes until the sauce has boiled down to about a third.
- Stir in the butter. Return the prawns to the pan and simmer for another 3-4 minutes so that the sauce is well coated. Drizzle with a little lime juice. n
