Ingredients for 5 servings:

  • 1 kg prawns, large or small
  • 3 small shallots, finely diced
  • 50 g garlic, fresh, diced
  • 100 ml olive oil
  • 1 pinch(s) of salt or sea salt
  • 1 pinch(s) of pepper
  • 2 sprigs rosemary
  • 1 bay leaf, if needed
  • Port. Parsley

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

Preheat oven to 200-220 degrees Celsius. Prepare a fireproof casserole dish (see picture). Heat the olive oil in a pan until very hot, then briefly fry the garlic and shallot until both are translucent. This is best done in a small pan and set aside. Fry the patted, dry prawns with pepper, salt, bay leaf, and rosemary in the olive oil until the prawns turn golden brown. Remove the bay leaf and rosemary. Place the prawns, parsley, garlic, and shallots in a casserole dish and bake for 15-20 minutes. Serve with fresh, warm white bread.
