Prepare broth for fondue – you need this

For a classic fondue broth you need the following ingredients:

  • 2 garlic cloves and 2 onions
  • 4 carrots
  • 2 parsley roots
  • 1/2 celery root
  • 1 leek
  • 1 bulb of fennel
  • 3 tablespoons olive oil
  • 2 cloves, 20 black peppercorns, 5 sprigs of thyme, and 2 bay leaves

Make fondue broth

Now that you have the ingredients for the broth, you need to follow these steps:

  1. First, peel your onions and roast them.
  2. Now take the celeriac, the parsley roots, and the carrots. Peel these ingredients as well and then cut them into cubes.
  3. Then wash the fennel and leek and chop both into small pieces. Then crush the peeled garlic cloves.
  4. Now place a large saucepan on the stove and add the olive oil.
  5. Once the oil is heated, you can add the carrots, parsley root, celeriac, leeks, and fennel and sauté for about 4-5 minutes.
  6. Then add 2 1/2 liters of water to the vegetables and mix well.
  7. Now add the onions, garlic cloves, bay leaves, cloves, thyme sprigs, and peppercorns to the mixture. Also, season everything with salt afterward.
  8. Then the broth has to simmer for about an hour. It is important that you put the lid on the pot so that the flavors of the ingredients can develop better.
  9. When the hour is up, you still have to strain the broth through a sieve or a cotton cloth and then season with salt and pepper.
