Ingredients for 1 servings:
- 350 g butter, soft
- 5 m.-sized eggs
- 350 g brown sugar
- 1 pack of sweets (Daim)
- 4 tsp, leveled baking powder
- 1 vanilla pod(s), pulp
- 350 g flour
- 1 jar morello cherries, drained
- Fat for the mold
- 450 g powdered sugar
- 10 tbsp lemon juice, freshly squeezed
- 1 tube(s) food coloring, red
- n. B. Sugar (decorative sugar, pink and green)
- 5 waffles (ice cream cones), various sizes
- n. B. Waffles (vanilla waffles) for the castle wall
- 2 packs of cake icing (“Princess Lillifee”, 125 g each)
- e.g. sweets (green apple snakes, foam animals)
- n. B. wafers (pink edible paper)
Instructions

for a child’s birthday
Preheat the oven to 180°C (top/bottom heat) and grease a square springform pan (38 x 25 cm). Separate the eggs and beat the egg whites until stiff peaks form. Place the “Daim” in a freezer bag and break it up with a meat mallet or similar tool. Beat the butter, sugar, egg yolks, and the scraped seeds of a vanilla bean until fluffy. Stir in the flour, baking powder, the Daim crumbs, and the beaten egg whites. Pour the batter into the prepared pan and top with the drained cherries. Bake at 160°C (convection oven) on the middle rack for about 50 minutes. Remove from the oven and let cool. Mix the powdered sugar with about 10 tablespoons of lemon juice until thickly coated. Tint pink with a dash of red food coloring. Carefully brush the ice cream cones with the icing or dip them in the icing and rotate slowly until evenly coated. Now sprinkle the ice cream cones all over with pink granulated sugar sprinkles and let them dry. Cut small flags from pink edible paper and attach them to the tower with icing. Pour the Lillifee icing into the center of the cake and carefully spread it out to all sides with a palette knife. Place the ice cream cones on top of the cake as towers and arrange the vanilla wafers around the towers to form a circular wall. Sprinkle green granulated sugar sprinkles and small sugar flowers in the center of the cake. Arrange chopped apple snakes around the outside of the wall as grass. Finally, decorate with edible foam animals (cows, bunnies).
