Profiteroles

The perfect profiteroles recipe with a picture and simple step-by-step instructions.

For the dough:

  • 300 g Flour
  • 2 tsp Baking powder
  • 50 g Sugar
  • 1 packet Vanilla sugar
  • 1 pinch Salt
  • 150 g Quark
  • 150 g Butter
  • 1 Egg

For the filling:

  • 1 Egg yolk
  • 200 g Quark
  • 50 g Sugar
  • 1 packet Vanilla sugar
  • 1 packet Ground lemon peel
  • 1 Protein

For the dough:

  1. Mix the flour and baking powder and sift into a mixing bowl.
  2. Add sugar, vanilla sugar, salt, quark, butter and egg and knead everything well.
  3. Chill the dough for a short time.
  4. Roll out the dough on a floured work surface and cut into small squares.

For the filling:

  1. Place the egg yolks in a bowl.
  2. Add quark, sugar, vanilla sugar and lemon zest and stir.
  3. Beat the egg whites until stiff, add and stir in.
  4. Put the filling in the middle of the dough pieces with a spoon.
  5. Fold the four corners of the dough pieces over the filling in the middle.
  6. Place the dough pieces on the baking sheets.
  7. Bake at 180 degrees for about 25 minutes.
