Ingredients for 12 servings:

  • 1 egg(s)
  • 250 ml milk
  • 125 ml oil
  • 50 g sugar
  • 30 g sugar, brown
  • 280 g flour
  • 2 tsp baking powder
  • some salt
  • nutmeg
  • 120 g prunes, pitted and finely chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 175°C and grease a muffin tin thoroughly or line it with paper baking cups. Beat the egg in a bowl. Add the milk and oil and stir in with the sugar. Combine the flour, baking powder, salt, and nutmeg, then add the egg wash and stir in. Fold in the chopped prunes. Pour the batter into the muffin tins and bake in the oven for about 20 minutes until golden brown.
