Pudding Slices with Homemade Eggnog

the custard cream

  • 5 piece Eggs (size L)
  • 3 piece Eggs (only the yolk)
  • 3 piece Eggs (only the egg white)
  • 500 ml. Milk 3.8
  • 150 g Sugar
  • 1 piece Vanilla pod (pulp only)
  • 100 ml. Advocaat
  • 200 g Flour
  • 0,5 packet Baking soda
  • Sifted powdered sugar
  1. Whatever you choose, the first thing to do is to prepare the puff pastry. If you want to make it yourself like I do and don’t have your own recipe for it, just go to my cookbook under the link = butter puff pastry the “basic recipe” Handmade
  2. Roll out the required amount of puff pastry and place in the greased baking tin or on a baking sheet. Prick the dough with a fork and bake it for 10 minutes at 170 degrees. Then you can take it out and let it cool down.

The pudding cream

  1. First, start by whipping the whole eggs and half the amount of sugar with the whisk. Then add vanilla pulp, eggnog (in my KB under the link) = eggnog 2.0 >>> or a good purchased variety and the remaining sugar.
  2. Heat the milk and add the whipped mass, stirring constantly. Cool down a little in a cold water bath. Finally, the three egg yolks, the flour and baking soda are mixed in. Beat the egg whites into egg whites and pull loosely into the pudding cream. Turn immediately by adding the finished baking pudding mixture to the pre-baked puff pastry.
  3. Use a spoon to draw some structure into the surface and then put it in the oven. 40-45 minutes at 180 degrees O / U heat should be enough. Otherwise bake again for a few minutes. Remove the cake from the mold and cut into small squares. Sprinkle with plenty of powdered sugar.

TIP

  1. If you like, you can also serve some cream. Personally, I like to mix cream with a very oily cocoa (which is dissolved). Just send it to the ISI, that’s it! I hope you enjoy baking and a good appetite.
