Puff pastry quiche with minced meat, tomatoes and feta cheese

Ingredients for 3 servings:

  • 1 pack of puff pastry, fresh from the refrigerated section
  • 2 onions, diced
  • 2 garlic cloves, chopped, squeezed
  • 500 g tartar
  • ½ tsp rosemary, thyme, oregano, sweet paprika each
  • 1 tbsp tomato paste
  • 3 m.-sized tomato(s), sliced
  • 150 ml sweet cream
  • 2 eggs
  • olive oil
  • salt and pepper
  • 1 pack of sheep’s cheese

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Heat olive oil and lightly sauté the onions and garlic. Add the tartar and fry until crumbly. Reduce heat, stir in tomato paste, herbs, and paprika, and season with salt and pepper. In a bowl, whisk the eggs and cream together and add a little salt. Place the puff pastry in a baking dish. Spread the tartar mixture on top, pour the egg and cream evenly over it, and top with the tomato slices. Finally, crumble the feta cheese over the top. Bake at 200°C until the pastry and cheese are nicely browned. Serve with salad.
