Puff pastry spinach muffins

Ingredients for 12 servings:

  • 1 pack of frozen puff pastry (450g, thawed)
  • 200 g leaf spinach, frozen, thawed
  • 150 g sour cream
  • 1 tbsp flour
  • 2 eggs
  • 150 g cheese, Gouda
  • nutmeg
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Preheat oven to 185°C. Combine sour cream, flour, eggs, and 100g of the cheese, and season. Squeeze out the spinach. Halve the dough sheets and place them in the muffin tin. Spread the spinach on top and cover with the cream mixture. Fold the dough tips together at the top (as best as possible) and sprinkle with the remaining cheese. Bake for 30 to 35 minutes (convection oven) and serve warm.
