Pulled Jackfruit Burger

Ingredients for 2 servings:

  • 1 can Jackfruit, organic, in brine (225 g drained weight)
  • 2 cloves garlic
  • ½ onion(s)
  • 100 ml BBQ sauce
  • some oil for frying
  • 2 hamburger buns
  • e.g. coleslaw
  • some lettuce leaves
  • some onion rings

Instructions

Working time approx. 50 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 30 minutes

Chop the garlic and onion into small pieces. Drain the jackfruit pieces, rinse briefly under cold water, and then squeeze out as much water as possible. Sauté the onions until golden yellow. Then add the garlic and jackfruit pieces and fry until crisp. As soon as the jackfruit pieces turn slightly brown, add the BBQ sauce. Let them sizzle for a while longer (about 5 minutes). Then place the jackfruit pieces and the sauce in a casserole dish. Tear the pieces apart slightly with two forks and then bake everything in a hot oven at 200°C (top/bottom heat) for 30 minutes. Then top the hamburger buns as usual. Pulled jackfruit is also delicious with fried potatoes and roasted corn on the cob, or simply eaten with some iceberg lettuce on toast.
