Ingredients for 5 servings:

  • 1 ½ kg pork neck
  • 50 ml sesame oil
  • 2 tbsp fish sauce
  • 2 tbsp soy sauce
  • 2 tbsp Worcestershire sauce
  • 2 tbsp vinegar (ginger vinegar)
  • 2 tbsp Soy sauce (Ketjap Manis)
  • 1 tsp chili sauce, hot
  • 1 tbsp beetroot
  • 1 tsp smoked salt
  • 1 dashes Tabasco
  • 1 tbsp balsamic cream

Instructions

Working time approx. 15 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 17 hours; Total time approx. 1 day 5 hours 15 minutes

With Asian marinade

Carefully mix all marinade ingredients with a whisk. Place the meat in a plastic bag—preferably a freezer bag. Pour in the marinade and massage it well into the meat. Tie a knot in the bag and refrigerate for at least 12 hours. Preheat oven to 75-80°C. Cook the marinated meat on a baking sheet or shallow grill pan for 17 hours. Before serving, shred the meat with two forks. Season with pepper and serve lukewarm on coleslaw with cucumber strips.
