Pumpkin and potato curry

Ingredients for 4 servings:

  • some olive oil
  • 2 cloves garlic
  • 700 g pumpkin flesh, cut into cubes
  • 700 g potatoes, peeled and diced
  • 4 tsp curry
  • 2 tsp turmeric
  • 600 ml water
  • 2 tbsp pine nuts
  • e.g. parsley
  • e.g. salt and pepper
  • e.g. coriander leaves

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 26 minutes; Total time approx. 36 minutes

Sauté the garlic. Add the pumpkin and sauté for about 3 minutes. Add the potatoes, curry mix, turmeric, salt, and pepper, and sauté for another 3 minutes. Deglaze with water and simmer for 15-20 minutes. Garnish with pine nuts and parsley.
