Gnocchi with beetroot and apple

Ingredients for 1 servings:

  • 100 g raw beetroot
  • 1 small onion(s)
  • 1 apple
  • ½ tbsp oil
  • 100 g gnocchi
  • n. B. Thyme
  • salt and pepper
  • n. B. cheese

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Cook gnocchi according to the package instructions. Peel and dice the beets and onion. Dice the unpeeled apple. Sweat the onion in oil until translucent, add the beets and sauté for 10 minutes. Add the apple and sauté for another 5 minutes. Season with thyme, salt, and pepper. Mix with the gnocchi and sprinkle with cheese, if desired.
