Pumpkin dip for boiled potatoes

Ingredients for 1 servings:

  • 400 g pumpkin flesh (yellow or red)
  • 200 g cream cheese with or without herbs
  • 1 cup crème fraîche with or without herbs
  • 1 tbsp parsley, chopped
  • 1 tbsp dill, chopped
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pumpkin flesh in a little water until tender, puree, and mix with the remaining ingredients. Fold in some of the chopped herbs and use some for garnishing. Serve with fresh boiled potatoes.
