Ingredients for 4 servings:

  • 75 g sugar
  • 2 tbsp water
  • 350 g pumpkin flesh (Hokkaido), in pieces
  • 1 orange(s), juice
  • 1 ½ tbsp ginger, finely grated
  • 1 pinch(s) curry powder
  • 180 ml cream

Working time approx. 20 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 20 minutes

Surprising Pumpkin Dessert

Combine sugar and water in a stainless steel pan, stirring occasionally, until light brown caramelized. Add the pumpkin cubes, ginger, curry powder, and orange juice. Simmer for about 20 minutes until soft, then puree and let cool. Whip the cream until stiff peaks form and gently stir in the mixture. Can be made a day in advance; stir in the cream just before serving.
