Pumpkin gratin

Ingredients for 4 servings:

  • 1 kg pumpkin flesh, ready to cook
  • 500 g potatoes
  • 1 onion(s)
  • 2 eggs
  • 150 ml crème fraîche
  • 200 ml sour cream
  • 3 clove(s) garlic, squeezed
  • 100 g grated cheese (e.g. mountain cheese or Gouda)
  • 1 tsp cumin
  • chili powder
  • Oil (olive oil)
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash and peel the potatoes. Cut into thin slices, ideally using a cucumber slicer for evenly thin slices. Grate the pumpkin in the same way. Dice the onions and sauté in olive oil until translucent. Then add the pumpkin and potatoes and sauté briefly. Season with salt. For the topping, mix the eggs with the crème fraîche, sour cream, and garlic. Season with chili powder and salt. Grease a baking dish with olive oil and pour in the vegetables. Spread the topping evenly and sprinkle the grated cheese over the mixture. Bake in a preheated oven at 180°C for about 45 minutes.
