Ingredients for 8 servings:
- 750 g pumpkin(s)
- 250 g mango(s)
- 3 bell peppers
- 10 chili peppers
- 200 g brown sugar
- 80 g fresh ginger
- 8 tbsp vinegar (wine vinegar)
- 1 tsp clove powder
Instructions
Working time approx. 1 hour; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 45 minutes
Grate the pumpkin, puree the mango, grate the ginger, and finely chop 2 chilies. Cook all ingredients over low heat for about 45 minutes. Remove the 8 whole chilies after cooking. Gently blend everything again with a hand blender (not too much to avoid leaving small pieces of pumpkin in the chutney).
