Pumpkin Meatballs with Princess Beans and Hearty Mashed Potatoes

Ingredients
 

Pumpkin meatballs: (14 pieces!)

  • 500 g Beef meat
  • 300 g pumpkin meat ½ Hokkaido pumpkin
  • 1 roll from the day before
  • 125 g 1 Onion
  • 2 piece Garlic cloves
  • 1 piece of ginger walnut-sized
  • 1 Red chilli pepper
  • 1 Egg
  • 1 tsp Meatballs & meatballs spice *) from ANKERKRAUT
  • 1 tsp Mild curry powder
  • 1 tsp Sweet paprika
  • 4 big pinches Coarse sea salt from the mill
  • 4 big pinches Colorful pepper from the mill
  • Breadcrumbs
  • 8 tbsp Peanut oil

Princess beans:

  • 220 g 1 can of fine princess beans / drained weight
  • 2 tbsp Butter
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill
  • 1 tbsp Freshly grated Parmesan cheese

Hearty mashed potatoes:

  • 400 g Potatoes
  • 1 tsp Salt
  • 1 tsp Ground turmeric
  • 1 tbsp Butter
  • 1 tbsp Cooking cream
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill
  • 1 big pinch Freshly grated nutmeg
  • 1 tbsp Roasted onions

Serve:

  • 2 * ½ small tomatoes for garnish

Instructions
 

Pumpkin meatballs: (14 pieces!)

  • Clean, peel and grate the Hokkaido pumpkin. Soak the rolls from the day before in warm water and squeeze them out well. Peel and dice the onion. Peel the garlic cloves and ginger and dice them finely. Clean / core the chilli pepper, wash and finely dice. All ingredients (beef meat, shredded pumpkin, squeezed bun, diced onion, diced garlic cloves, diced ginger, diced chili peppers, 1 egg, 1 teaspoon of meatballs & meatballs seasoning *), 1 teaspoon of mild curry powder, 1 teaspoon of sweet paprika, 4 big pinches of coarse sea salt from the mill and 4 big pinches Pinch of colored pepper from the mill) in a large bowl and mix / knead well. Shape meatballs (approx. 14 pieces) with moistened hands, roll in breadcrumbs, fry in a pan with hot peanut oil (8 tbsp) on both sides until golden-brown and keep warm in the oven at 50 ° C until serving. *) Meatballs & meatballs spice from ANKERKRAUT / mixture of ingredients: sea salt, sweet paprika, fried onions, onions, mustard flour, black pepper, raw cane sugar and garlic

Princess beans:

  • Drain the Princess beans through a kitchen sieve and heat them in a small saucepan with butter (2 tbsp). Season with coarse sea salt from the mill (2 big pinches) and colored pepper from the mill (2 big pinches). Finally, grate the Parmesan over the top (approx. 1 tbsp) and mix everything carefully.

Hearty mashed potatoes:

  • Peel, wash and dice the potatoes. Boil the potato cubes in salted water (1 teaspoon salt) ground with turmeric (1 teaspoon) for about 20 minutes, drain through a kitchen sieve and return to the hot saucepan. Add butter (1 tbsp), cooking cream (1 tbsp), coarse sea salt from the mill (2 big pinches), colored pepper from the mill (2 big pinches) and freshly grated nutmeg (1 big pinch) and work through well with the potato masher / mash through, Finally fold in the fried onions (1 tbsp).

Serve:

  • Place 2 meatballs on each of 2 plates and serve with the princess beans and the hearty mashed potatoes, each garnished with a small, half tomato. Use the remaining meatballs for other dishes or just eat them cold with bread or rolls.
