Pumpkin Noodle Bake

- 200 g Penne
- 1 Red peppers
- 200 g Pumpkin
- 1 Onion
- 150 g Cheddar cheese
- 200 g Gouda middle aged
- 400 ml Milk
- 1 Egg
- Freshly grated nutmeg
- Salt
- Pepper from the grinder
- 1 tbsp Honey
- 1 tsp Sweet paprika powder
- Olive oil
- Chopped parsley until smooth
- Cook the pasta in boiling salted water for 4 minutes and drain. Coarsely grate the Gouda and Cheddar cheese.
- Clean the pumpkin and paprika, onion and dice it – toast in a little olive oil with salt, pepper and honey and mix with the pasta – put in a greased casserole dish.
- Mix the milk and egg with half of the cheese and season with salt, pepper, nutmeg, parsley and paprika – pour everything over the pasta-vegetable mixture.
- Sprinkle the rest of the cheese on top and bake in the oven for 20 minutes at 190 ° C until golden brown.
